When Friends Give You Lemons…

Indio, California:  Mary and Captain Jim have a lemon tree on their lot at the Motorcoach Country Club and it bursts with fruit every year. This year seems to be a bumper crop and they harvested over 100 lemons and gave 41 (I counted) to us.

And by us, I mean me - because no one helped me with the juicing.

I washed them in a sink of water, then started the juicing process with our my little electric juicer.

The 41 lemons produced over a gallon of juice!

I froze ten cups (flat in vacuum-sealer bags) and then began pouring one-tablespoon of juice into our my two ice cube trays. This was a process, but I had it down to a four-hour rotation and ended with a gallon zip-top bag filled to capacity with lemon juice cubes:

We've enjoyed lemonade. Chicken marinated in lemon juice and herbs. Lemon in ice tea. Lemon in salad dressing.

Leo drew a picture of himself with his Bubbe. As I was complimenting my grandson on his talent and thinking he was so clever to add earrings to my ensemble, I was informed by the artist they were not earrings, but my ears. Betcha Michelangelo drew pictures of his grandmother.
