Chilaquiles (cheel-ah-keelies). Well, I made my version: Cheater RV Chilaquiles!
I sauteed a little onion with about half of a jalapeno pepper. I would have used an entire jalapeno pepper but DT someone in our house complains about too much spice.
When the onions were soft and starting to brown, I poured in one (10 oz) can of red enchilada sauce and let the sauce simmer until it was thick and bubbly - about five minutes.
Then I added a few handfuls of plain tortilla chips.
Stirred well, removed from heat and left covered for 2 or 3 minutes.
And served, topped with a little crumbled white Mexican cheese (Monterey Jack or Cheddar would work) and then garnished with sliced green onion. I like to use cilantro too, but there was none in my kitchen. I also like to serve Chilaquiles over a bed of refried beans, but I didn't have beans either. Whatever, they were still yummy.
All that work this morning charting satellite readings and still no internet (except for 45 minutes early this afternoon). I have stumped the satellite internet technicians. A wasted day. A day we could have spent golfing or hiking. Jimmy Buffett would call it "another shi**y day in paradise". That Jimmy has such a way with words.
Thank goodness for my iPhone "back-up plan" - happily tethered to my laptop (as long as we are somewhere with cell service) - I can post my blog and surf the web. (Don't worry, I let My Driver use it too.)

FROM OUR CAMPING JOURNAL RV LOG BOOK: The Springs at Borrego RV Resort & Golf Course. One of our very favorite RV parks on the west coast. Sites are large and each has a nice cement patio and picnic table. Cement 50 amp pull-throughs will full service. There are also different varieties of citrus trees all over, so you will never be lacking for a cocktail garnish in the winter. Slow wifi. Fabulous warm pool and many hot tubs - all from their own hot springs! Fitness center, library, community rooms. Regulation 9-hole golf course. Recycling. Huge fenced dog park! We are paying $64 per night for a "premium" site.
