Reality Bites

Indio, California: I learned a valuable lesson (that I will most likely forget by the next time I attend a Jimmy Buffet show) this weekend: I am out of shape. I know, strange that a girl who can run five miles could be so out of shape, but after that concert Saturday night, I am so sore it hurts to walk. What did I do to make me so achy? I danced for two or three hours in 2-inch heels at Jimmy's show. That's all. My calves are paralyzed. (And y'all know those suckers are massive.) My knees feel like they were hit with a hammer. A jack hammer. Not only that - the weekend wiped me out so much, I slept for TEN SOLID HOURS last night.

Because of my desperately painful lower-leg situation, I only walked today... and bywalked, I mean I walked down to the pool and went for a swim. Anything to loosen up the knots in my tender calves. Then I soaked in the hot tub and repeated this procedure until I hobbled back to our motorhome.

The time change is advantageous to DT and myself. Just last week, by the time we had finished working for the day and were ready to start dinner - it was already dark. Temperatures drop quickly in the desert. This evening we were able to enjoy the sunset and relish our beautiful view - with a hot air balloon in the distance.

Just a lovely evening and a peaceful view.

Tonight I went all Chipotle in our RV. I cooked brown rice in the rice cooker and sauteed onion, garlic, jalapeno, a can of rinsed black beans and frozen yellow corn in a little olive oil and seasoned the mixture with cumin, paprika, chile powder and oregano.

We topped a bed of rice with the black bean mixture and then garnished the plate with chopped tomato, salsa, diced avocado, sliced radish and fresh cilantro.

Delicious. Filling. Vegan. RV-Easy.
