Quiet Sunday

La Quinta, California: Sunday is my big exercise day. I try to walk at least six miles. Takes forever. Sunday is also an easy cooking day for me, as I usually make a pizza. This week I tried a Rosemary and Red Onion Pizza, mostly because I had ricotta to use. Everything was prepped early in the afternoon and ingredients for a pizza crust were popped in the bread machine.

Even the appetizers were lazy. Well, maybe just uninspired?

The pizza crust was good, but the finished pie did not get good reviews from My Driver and I thought it was a bit 馬馬虎虎. However, I totally redeemed dinner with a composed salad made with roasted vegetables.

Roasted slices of zucchini and tomatoes, topped with roasted butternut squash cubes (from the freezer) and roasted beet cubes (also from freezer), on a bed of arugula, with a balsamic vinaigrette. Done!

We are watching Stanley Tucci's Searching for Italy on CNN Sunday evenings. Really enjoying the show.
