On the 6th Night of Hanukkah…

Indio, California: ...my true love gave to me... a 2012 running journal! Which is, coincidentally, the same thing I gave to him this evening. Aren't we just the most romantic couple?

We had a great day here in the resort.

It was 73 degrees.

Not a cloud in the sky.

Oh, yeah. Don't you know I emailed this photo to all my friends/relatives in cooler climes (i.e. everyone I know). Most days, I am a very nice woman... but sometimes I do show a bit of the devil.

Again, we spent much of the day out of doors. Running. Swimming. Hot-tubbing. Walking Reese. Enjoying our view.

As the sun was setting, we cracked a bottle of The Widow and made a toast to that other guy celebrating a birthday today - Jimmy Buffett! Jimmy is 65 today. Happy Birthday!

Sunset is just as lovely as sunrise from our little slice of paradise today. We watched a bird diving in the water.

Reese was on-point and ready to pounce at any moment!

Just before the sun set, a lone boat cruised by. So pretty.

Then we went inside and "lit" our electric menorah and I finished-up the lamb shanks I braised yesterday and we enjoyed a delicious meal.

The lamb shanks (hello, $10 EACH from an organic farm in southern Oregon) were prepared in the same method I use for my Lamb Shanks with Arugula & Cannellini Beans, except I used one onion, 4 cloves of garlic, 2 cups chicken stock, one cup of white wine and four stems of fresh rosemary. Roasting time/method was the same. I removed the shanks to a plate, strained the juice and made a thick gravy (that I served over mashed potatoes) with the strained pan juices. Dang if this wasn't just delicious. Too much left over though. I'm thinking we have become a one lamb shank family and will make a lamb, barley and mushroom soup for Lisa's freezer.

Lisa's freezer is turning into a gourmet treasure chest.

Speaking of Lisa... the Cutest Baby Ever rolled-over today for the first time! So exciting. Leo will probably be reading by Tuesday.

Until my next update, I remain, your celebratory correspondent.
