Mental Flossing

Indio, California: It takes a long while for me to run jog exercise because I move at about the same speed as a turtle. This is a good thing. This time alone gives me occasion to think, reflect, plan my day and do a little Mental Flossing. (And goodness, I certainly have a lot to think about!) The only distractions are the occasional speeding golf cart, shirtless fat men puffing on cigars (at 9 o'clock in the morning!) or giving a shout-out to fellow joggers/walkers. We haven't been doing very much the past few days. (There is always a little mild depression let-down when The Lovely Lisa leaves after a visit.) We had faxes and phone calls from the title company, but everything looks to be speeding right along with the purchase of our palatial plot of lawn at the Motorcoach Country Club. (If you haven't been keeping up, we purchased lot #322 last week.)

Lisa and Lenny had their 20-week visit to the doctor. Everything is looking very good! Modern sonograms/ultrasounds/3-D machines reveal our little Grandson is going to be a lawyer, have three children, enjoy fly-fishing and Szechuan foods! Okay, I am just kidding about the fly-fishing part... but isn't it amazing how much technology has changed from the grainy black & white blurry blob DT & I saw on the screen in 1981?

Our Little Grandbaby appears to be shunning the paparazzi! Back off, peeps - talk to my publicist! Is this going on Bubbe's blog?

The 3-D ultrasound revealed the baby is 20 weeks and 3 days old, organs are developing normally and he has ten fingers and ten toes and is most definitely a boy. I know babies have grown at this same rate for countless millennium - we just didn't get to see it happening! Technology advances, but it still takes 40 weeks to grow a baby.

After too many meals out this weekend, we decided to stay in and watch the Ducks lose to Creighton in the CBI Tourney. (The CBI Tournament is for teams too bad to play in the NIT Tournament. The NIT Tournament is for teams too bad to make it into the NCAA Tournament.) In some strange quirky twist of sports trivia, the University of Oregon hired our basketball coach, Dana Altman, away from Creighton last year. 

The Ducks lost (Game One in a weird 2-out-of-3 playoff series), but we enjoyed a great dinner courtesy of Leite's Culinaria - Roasted Sweet Potato & Feta Salad.

The recipe serves eight, so I cut it down to roasting one potato and one red onion and served the hot roasted vegetables over a bed of arugula. The only thing I added was a handful of toasted walnuts (and a tomato garnish). Make the recipe vegan by not adding the feta. We both really enjoyed the "salad", but the sweetness of the potato could not hide the bitter taste of a Duck Defeat.
