Matzo Pizza

Sad to see Virginia and Gene go after their short visit, but we probably exhausted them and they are most-likely craving bread, as we are keeping Kosher for Passover.

Our afternoon revolved around watching college hoops on television and doing laundry. It was a hot 91° today in the desert. Nice.

I had a few readers ask how I roasted potatoes in a crockpot the other night:

Sorry I have not shared this with you previously. So simple. Does not really require a recipe - just a few simple instructions. I have never used russets, but always use a Yukon Gold or Yellow potato. As you can see from the above photo, I cooked a dozen medium-sized potatoes on Thursday night in my little slow cooker.

Wash the potatoes and pierce the skin once with a sharp knife. Place the potatoes in the crockpot, drizzle about two tablespoons of olive oil over, sprinkle the potatoes with Kosher salt and toss it all with clean hands to coat. Place the lid on the slow cooker and roast for 6-8 hours on low (or about 4 on high). Do not add water. Do not stir. If the potatoes over-cook, it is okay - they will not fall apart. This style of cooking is fabulous if you don't want to heat the oven (and the house) or if your oven is busy cooking something else. A crockpot uses pennies of electricity - so you can save money roasting potatoes this way. Sometimes I add rosemary and lots of cracked black pepper - experiment and have fun.

For the first time tonight, DT and I went on a "booze cruise" in our golf cart. Please do not let your children read this post about drinking and driving... but at cocktail hour in this RV resort, it is not uncommon to see campers cruising around in their golf carts, cocktail in hand, going from campsite to campsite - chatting, joking, visiting and probably getting refills. We are new to this ritual, so just went to see our friends, Brent & Crystal. They admired our new ride and we chatted for an hour or so. Thank you, Dear Friends, for accommodating our Maiden Booze Cruise.

So what sounds like an ancient Incan site in Peru, but is really a Kosher-for-Passover treat? Matzo Pizza. This vegetarian dish is ridiculously easy to prepare and really hits the spot after nearly a week of bread-free life.

Take one entire matzo cracker, top it with a little pizza sauce (I made ours with tomato sauce, garlic and oregano), spread it over the matzo, sprinkle a little grated mozzarella cheese over and bake for 10 minutes at 400 degrees. After the "pizza" is finished baking, sprinkle a little fresh basil chiffonade over and serve. Pizza Margherita, Passover-style.
