More Matzo

Indio, California: In spite of a constant strong wind today, we managed to have a really relaxing Sunday. Much of the day was spent on the outside patio, watching college basketball on television, including the gruesome compound leg fracture of Louisville guard Kevin Ware. (I had Florida picked to win it all. Bye-Bye Bubbe's Bracket.)

Anyway... clearing up a few things on my desktop and getting ready for April... here is a 17 second video of the C.B.E. babbling-away last week in Oregon:

Matzo Pizza is not the only creative use of this cracker. Oh, no. I went all out today and made Matzo Brei (with much less butter!) for DT (he loves Matzo Brei).

I make it frittata-style and topped the matzo brei with sour cream, slivered green onion and fresh parsley (from our garden!). Delish.

And how about some Machos? No. Not a typo. Nachos made with matzo:

How we lose weight during this holiday is beyond me.

LET'S MOVE IN MARCH! I have challenged y'all to get out there, lace up your sneakers and walk or jog (or the exercise of your choice) at least 30 minutes - five or six days a week in March... I'm doing this for charity and my prominent backside. 

Great news (for me)! I actually ran today and it didn't hurt too much and there was no visible swelling on my knee after. I ran 1.5 miles and walked 1.5 miles and iced for about 30 minutes after. So happy to be back on the streets. I am going to assume it is my Passover diet that has let me shed the 4 pounds I was down this morning (compared to my weight March 1st). I ran 68 miles in March and had to take a week off due to injury. DT thinks I injured myself from running too much. He's most-likely right, so I will ease-back to four miles a day over the next week. I made an on-line donation this evening to the Oregon Food Bank... but I donated $100. Not their fault I injured myself and could not complete my fantasy stupid idea dream goal.

NOTE: DT ran 100 miles this month and biked 200 miles. Show-off.
