Is it Monday already?

Indio, California: Wow. A very busy weekend. Just in case you missed it, our daughter, The Lovely Lisa, was engaged over the weekend. We are still a bit in a daze. It was such a wonderful surprise party! People are still sending me photos of the engagement dinner and each photo brings back so many memories. We are loving this part of parenthood. But, back to reality. We are in the Palm Springs area this week as DT has meetings (in the next-door community of Indian Wells) for the University of Oregon. Volunteer extraordinaire! Dave attended a function last night, but opted-out of the golf event today. Thank goodness he did too, because winds gusted to 40 miles per hour this afternoon. Golf would have been miserable. Instead, he worked out on the elliptical machine at the fitness center (while I ran 3 miles around the resort in a "heavy breeze"). The winds didn't start roaring until about noon. After exercising, he took me to lunch and then we ran errands.Remember my devotion to Taqueria Guerrero? They have several locations in the Indio area. Tacos are $1.29. The shredded chicken tacos are perfect and two tacos are plenty for lunch.

Costco. Supermarket. Post Office. Gas station. Gasoline is over $4 a gallon in the Coachella Valley. We paid $51 to fill-up our teeny Honda CRV. Speaking of tow cars... I saw a Maserati in the RV resort today. If their tow car is a Maserati, I can't wait to see their RV!

As I said, the wind was insane this afternoon. No such thing as a "good hair day" in Indio today. Our lawn chairs went bouncing across the next campsite. There is an inch of grimy sandy dust on every surface inside the Magna Peregrinus. I made a movie!

Leite's Culinaria featured a recipe for a Senegal Lamb & Butternut Squash Stew this week. I have tasted this dish - mafe - before. I do not recall cabbage in the dish, so decided to make my own, RV-friendly, version.

The stew has just a bit of peanut butter in the sauce. The peanut butter is nearly impossible to detect, but it lends to a lovely savory, sweet and spicy stew. Very thick, the stew is served over a bed of rice and is completely satisfying. I will post my version of the recipe this week, as we both really enjoyed the stew immensely and hope you will also. 

DT will be in meetings all day tomorrow, which will leave me here to supervise the bus wash/wax scheduled for the morning.
