Borrego Springs, California: The weather in Borrego Springs was just marvelous today. 70°. Not a cloud in the sky and not a hint of wind. We enjoyed our coffee on our sunny patio and then DT ran on the grass on the golf course and I did one of my favorite workouts in Borrego - the Pole-to-Pole Pounder. A great workout for anyone, it requires alternating running fast and walking between the telephone poles along the road. Walk, run, walk, run, walk, run, rinse, repeat. Do this for four miles and you will know you had a great exercise session the next morning. Awesome. It was great to be running in Borrego again. My boyfriend was still waiting for me, down on the corner and still offering me a box of just-picked grapes.



We each had a slice of pie and bought a Natural Apple Pie to bring home.
We took the long-cut back to Borrego Springs, via Ranchito, so I could snap photos of Borrego Springs and the Salton Sea for your enjoyment.



I saw a recipe for Grown-Up Tuna Noodle Casserole today (via twitter) on The Kitchn(not a typo). What are the chances all the needed ingredients would be in our RV?
100%.
Granted, the author called for kale because she didn't care for peas in tuna casserole, but I had peas and I did not have kale, so went old-school. I made a half-recipe and skipped the whole bread crumb baking step and just sprinkled a little grated cheddar over all. Everything is beddar with cheddar.


RV PARK: The Springs at Borrego RV Resort & Golf Course. One of our very favorite RV parks on the west coast. Sites are large and each has a nice cement patio and picnic table. Cement 50 amp pull-throughs with full service. There are also different varieties of citrus trees all over, so you will never be lacking for a cocktail garnish in the winter. Wifi. Fabulous warm pool and many hot tubs - all from their own hot springs! Fitness center, library, community rooms. Regulation 9-hole golf course. Recycling. Huge fenced dog park! We are paying $69 per night for a "premium" site.
