Indio, California: Today is Thursday, right? With the holiday on Monday, I am so confused. I keep thinking today is Wednesday - giving me an extra day before our departure... but no. Thursday.
One of us needed to be on-hand all day to wait for repair people, so we had a fairly quiet day. As predicted - since the motorhome was washed yesterday - it rained this morning. Much needed in the desert, so I will not complain.
As long as I was RV-bound today, I used my time to prepare one of my favorite RV recipes, RV Focaccia. If you have not yet tried this recipe, I urge you to give it a spin ASAP. No kneading. No bread machine required. Whisk the dough together in the morning and bake it in the evening. Nothing could be easier. Tonight I experimented by putting the dough in an oiled 8x8-inch baking dish. The bread tasted the same, but it was difficult to remove from the pan. Best to just listen to my own instructions and go commando - free-form on a sheet of parchment paper.


We enjoyed such a lovely evening in our casita. Though we had rain this morning, the temperatures were mild - 70's - so the gas fireplace kept us warm enough outdoors to catch-up on golf (Torrey Pines) and the other important matters of the day.
I returned My Driver to Florence, Italy, by preparing one of his favorite appetizer/salads - Bresaola over Arugula with shaved Parmesan, olive oil and lemon.

Not really, since our entree tonight was vegan.

Tonight I tossed the oven-dried tomatoes with spaghetti, garlic and basil. It was a delicious and super-easy dinner. Plus, we runners need our carbs.
