Indio, California: The veggies and herbs have been planted - a full three weeks earlier than last year.




It will be fun to watch the garden grow - and so much more convenient to snip off a sprig of basil or rosemary rather than purchasing those plastic containers from the grocer.
Other activities of the day included watching (TV) the Ducks beat the Beavers - always fun - in basketball. GO DUCKS!
Late afternoon, we took a cruise around the resort in our golf cart and saw this:

Remember a few weeks ago when we stopped to the Mexican grocery chain, Cardenas, on our way from Yuma to Borrego Springs and bought a grilled chicken? That bird fed us several meals and then I boiled the bones with an onion, cilantro and a jalapeno to make a Mexican-inspired stock, added the meat from a breast and froze the concoction. This evening I added a can of diced tomatoes and a handful of rice to make a simple healthy soup. Kinda like "tortilla soup with rice" or something...
