Daughter Dinner

This evening My Dad & Mary came to town, so it was arranged for Dad to have dinner with his lovely daughters.

The weather pretty-much cooperated, and we were able to enjoy appetizers and cocktails on the deck. Luckily we still had a boat-load of flower arrangements left-over from the Big Party last Friday.

Dave and I chose line-caught-never-frozen Sockeye Salmon as the main course for our family dinner tonight.

We purchased this gorgeous fish at New Seasons for only $12.99 per pound. We are so blessed to live in the Northwest.

Mary and Dad have been up in Seattle visiting her daughters and attending the suddenly-Ichiro-free Seattle Mariner games. It is a whole new world up there.

Our menu tonight included a very healthy salad/appetizer course - Zucchini Marinata. This dish is only paper-thin shaved zucchini slices - marinated in lemon juice, vinegar, salt, pepper and olive oil - served with a little parmesan or pecorino cheese. Nothing could be easier, more delicious or prettier.

DT grilled the sockeye and I served it over a bed of sauteed spinach, accompanied with sliced heirloom tomatoes, sliced radishes and avocado. A dab of basil-butter was placed on top of each piece of salmon.

This meal was way too healthy! Dessert was fresh fruit - orange slices, pitted cherries, blueberries and raspberries. All organic, of course.

It was wonderful to have our Dad and Mary here tonight for an evening of fun and good food... and we also watched the Mariners win!
