Catching Up

Indio, California: I am just not cruel enough to go on and on and on and on about the gorgeous weather we have been enjoying the past several days. The temperatures have been in the high 70's and even climbed to 81 yesterday. The best part? No wind! It is usually windy in this part of the world, so we have been spending a lot of time outdoors. DT golfed all day yesterday.

I tossed and turned all night Sunday and just could not get to sleep. So annoying. I thought those menopausal nights were long behind me - but who knows why we old ladies stew, worry and fret? Homeland? Apparently when I WAS asleep, I was snoring so hard, wallpaper was being sucked-off the wall... or so claims My Poor Roommate. I woke Monday feeling like I had jetlag and a hangover, yet I had neither. Monday was a fog. A no-jog fog.

Yesterday, we had invited neighbors, Crystal & Brett, for dinner. I made a veggie tray and DT grilled that chicken I bought at the farmers market. Twice-Baked Potato Casserole was also on the menu, but the bird took a bit longer that we thought... the casserole hung-out in the oven a little too long... so it was more like Thrice-Baked Potato Casserole. We also had a pretty tomato & basil salad made with three different types of tomatoes.

Butterflied and marinated all day in a zip-lock bag in herbs, garlic, white wine and lemon juice.
Every time I turned the bag over, I said, "Honey, I'm flipping the bird!".

The best (and prettiest) item on the menu was the Rosemary Olive Oil Cake with Lemon.

This morning was spent in the kitchen(s) as well - baking organic Oatmeal Date Walnut Cookies for Leo... except I didn't use walnuts, so doubled-up on the dates.

Though Leo has finally bulked-up to 25 pounds, at over three-feet tall, dude is a bean pole.

A very sophisticated bean pole:

You are going to freak when I tell you this is Leo's school photo? Isn't it great having a hipster LA grandson? All fancy-like? The kid could be a movie star with those looks and curls.

Or not. Here is Mr. Fancy Pants having gelato with his Daddy this afternoon. All Boy. Have I ever mentioned how much laundry this 25 pound creature creates?

Can't wait to see Leo - we are heading over to Los Angeles tomorrow. Again, I am bringing dinner - RV-Easy Artichoke & Spinach Manicotti. (Recipe coming soon.)

I will leave you tonight with two just-snapped photos of yet another brilliant sunset:
