Indio, California: Another thrilling day in the RV resort! Are y'all getting jealous of our exciting lifestyle? I bet!

My Driver was up before dark to make a super-early tee time at the Marriott Palm Course, with other golfers from our resort. There is no way to get-up, have coffee, and get dressed, without waking the person sleeping on the other side of your bed in a motorhome. I will never forgive him for this today. Even the construction workers don't show up next door until about 6:15. After he left, I could not get back to sleep, so was out the door for my exercise before I usually am out of bed. Good thing too - another 100+ day in Indio. 109°, again.

What I saw on my laps today:

Several crews are still inside the walls of the Motorcoach Country Club, trimming the palm trees. They leave piles of leaves and debris behind, and a chipper-truck follows them around. It is a noisy and messy ordeal, luckily only happening twice a year.

Dave returned $10 richer from his golf game. Please do not alert the IRS, but this makes $30 in golf earning this year. The man is an absolute gold mine.

My sister, Renee, sewed masks for us and they arrived today. Dave tried-on his mask, but had to report there is a serious flaw in the design:

Dave went out in search for table-scapes again this evening. Pickings are getting slimmer and slimmer as the temperatures get higher and higher... yet, he still delivered the goods tonight:

Purple from Lois & Steve, white roses from never-seen neighbors,
yellow from Bob Lamphere's lot, and orange from Ellie & Scott

I broke-out two more of the new vintage Limoges appetizer plates tonight. They are so pretty!

I look just like this when I golf.
Roasted red pepper bruschetta on toast, dried figs, Tillamook cheddar, Manchego, roasted/marinated mini-artichoke hearts, and olives.

Dinner tonight was super fast and super easy: Sheet-Pan Chicken with Jammy Tomatoes and Pancetta. Prepped early in the day, the chicken marinated all day in the fridge/sauce, and everything went onto the sheet pan just before roasting for 30 minutes. This recipe was prefect tonight, as I had a package of grape tomatoes that were starting to get a bit wrinkly.

Garlic and grape/cherry tomatoes, roasted with boneless/skinless chicken thighs marinated in paprika, cumin, oregano, olive oil and lemon juice. The recipe calls for a few slices of bacon, but I ignored that part. Very good. Probably would have been even better with rice, pasta, or potatoes... but I served it with a Caesar salad.

Sheet pan dinners are the best!
