Pizza in Canyonville

Canyonville, Oregon:  Yes, Dear Reader - after more than six months away - we have returned to the Great State of Oregon! Dave We drove about 275 miles today, crossing the totally-filled-to-the-brim Sacramento River, and a totally-filled-to-the-brim Lake Shasta. Water, water, everywhere! Such a difference one year has made in the Sierra and Cascade ranges.

We made only a few stops today - one being for a bowl of leftover veggie soup at the rest stop just north of Weed. This rest area is at an airstrip and offers a perfect vista to the snow-covered peak. So pretty. 90 degrees and not a cloud in the sky. 

We stopped for the night at one of the nicest RV parks in America - Seven Feathers at exit 99 (I-5) in southern Oregon. This place has amazing facilities and is just above the Seven Feathers Casino complex which offers gaming, restaurants, a spa, hotel, concerts, activities and a full-service truck stop. Everything a girl could need.

Honestly, I haven't been down to the casino for years and years and we tend to stay here both coming-and-going to Indio. Maybe this time, I will check it out again?

Apparently this resort will host a rally this week, so we were unable to secure a pull-through site. No matter. The Seven Feathers RV Resort was designed to make backing-in even the largest coaches a breeze. However, the clerk at check-in told us our site was exactly 45 feet long, so our car would have to be parked elsewhere. Hmmm... looks like they need a new measuring tape? (Our bus is 45 feet long.)

Sunday night is Pizza Night at our house. The past two Sundays have been not-even tolerable due to store-bought pizza dough. I made my usual (easy recipe) dough today, but my RV oven has a maximum temperature of only 450° and the results are just not spectacular at this "low" temperature. The RV has a GE Profile Advantium convection oven and I found it has a mode to cook a "deli fresh pizza" in 13 minutes. I stoopidly gave it a try, which resulted in a half-baked pizza. Ugh. I then just turned the oven to 450 degrees and let it continue to cook. Dang.

It was not browned and it wasn't very crispy, but the taste was okay and the bread cooked-up tolerably. (Is tolerably a word?) Will I ever make a decent pizza again?

I served the pie with "Dave's Salad" - a concoction dreamt-up by My Driver consisting of only four ingredients: fresh arugula, grated parmesan cheese, freshly-ground black pepper and olive oil. That's it. It is one of my favorite salads... especially coming from a guy who only has grilling meat and egg-frying on his list of kitchen skills.

Oh... and doing dishes. The dude can do dishes and empty a dishwasher like it is his job.

Red sauce, fresh mozzarella and chopped basil. The fewer ingredients, the better for our dinner tonight.
