Now that My Driver is back in Indio, I feel the need to cook and feed him. He runs a lot and needs a lot of fuel. With the Academy Award program on television this evening, I decided to prepare easy Greek Meatballs (Keftedes). The meatballs can be served as a snack with a simple Tzatziki sauce or the meatballs can be stuffed inside pita bread to be enjoyed with sliced tomatoes, green peppers and cucumbers - and slathered with Tzatziki.
Either way, you get to look at George Clooney for several hours.
Meatballs, ready to bake
Simple Tzatziki Sauce:
6 ounces plain Greek yogurt (fat free is great)
¼cup grated cucumber (do not peel)
1 clove garlic, minced (or use a Dorot
frozen garlic cube)
1 teaspoon dried oregano
pinch Kosher salt
Combine yogurt, cucumber, garlic, oregano and salt in a small bowl. Refrigerate to let flavors meld for an hour or so. Serve with the meatballs.
SLOGGER REPORT: Since it was quite warm in the desert today, I ran 4 miles on the treadmill in the fitness center. I am going to say I am having a bit of trouble with my left hip. Not sure at this point if it is going to be an issue, but I am telling you, my left hip is giving me a crap-
boat-load of pain.
