San Diego, California: No Rolling Stones concert in San Diego this weekend for us. We are still Sheltering-in-Place in our campsite in Indio.

This afternoon, DT wanted to go for a drive. We brought face masks and gloves, but never left our car, as we visited neighborhoods on our wish list. We drove past way-too-many houses-for-sale, from Palm Springs to La Quinta. Nothing interested us. There are a bazzilion houses for sale in the Coachella Valley. Surely there is one for us?

Where is our dream home?

After returning to the Motorcoach Country Club at nearly 5p, I realized my planned menu would require too much work, so resorted to a much-easier Chicken Parmesan.

How much chicken can two people eat?

Mary and Captain Jim stopped by for Happy Hour. They brought their own drinks, we did not offer snacks, and we sat 10-feet apart. COVID-19 HAPPY HOUR.

The New Normal.

At such a late hour, our appetizer tonight was (what else) potato chips. I’m only human.

Chicken Parmesan, over a little bit of spaghetti (for My Driver) was just the perfect thing for our dinner tonight. I also served a tossed salad loaded with hearts of palm, roasted red peppers, peperoncini, green olives, red onion, a lot of celery, and a little red leaf lettuce.

There is no recipe for this dish. Chicken breast cutlets, dredged in flour, dipped in a beaten egg, dredged in panko bread crumbs. Sautéed in oil until cooked through. and browned on both sides. Place in a baking dish coated with a red sauce (from a jar - we are camping!) and topped with a mixture of mozzarella and Parmesan cheeses. Broil until bubbly and brown. Served over spaghetti. Garnish with parsley.
