Salsa Chicken

This recipe is so easy, it shouldn’t even be called a recipe. Grab a few items from the grocer, toss them together and bake for a delicious dinner that uses only one baking dish!

1 green bell pepper, seeded and cut into thin strips
1 pound boneless, skinless, chicken breasts or thighs
16 oz carton deli salsa (hot, medium, or mild, your choice)
1 jalapeno pepper, seeded and chopped (optional)

Steamed rice as accompaniment

Sprinkle the green pepper slices evenly over the bottom of an oiled covered casserole dish. Lay the chicken pieces on top of the peppers and pour the salsa over all. If using, distribute jalapeno slices over the chicken. Cover and bake at 375° for about 30 minutes, then remove the lid and let bake for an additional 10 minutes.

Best served over steamed rice.

Serves 2-3 people.
