
This recipe makes enough marinade for around two pounds of chicken (or meat of your choice). Serve with rice or a black bean salad.
Juice of two limes
¼ cup olive oil
½ teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
2 lbs. chicken pieces – your choice
Make the marinade in a zip-top bag. Add chicken and toss to coat. Let marinade, refrigerated, for several hours. Bring out of the refrigerator about 30 minutes before grilling.
Grill over hot coals until cooked through.
