Pear & Walnut Salad with Blue Cheese
This is a nice salad for the fall or winter.
DRESSING:
3 green onions, sliced
1/3 cup olive oil
2 Tablespoons walnut oil
1 Tablespoon red wine vinegar
1 Tablespoon Dijon mustard
1/2 teaspoon Kosher salt
Freshly ground pepper, to taste
FOR THE SALAD:
1 Bartlett pear, cored and sliced lengthwise in thin strips
1/2 cup crumbled blue cheese
4 to 6 cups romaine or butter lettuce torn
1/2 cup walnut pieces, toasted
Marinade sliced pear in salad dressing for a few hours. Just before serving, gently toss all ingredients together.
Serves 4.
