Not on the Guest List

The weather is simply glorious! 80-degree temperatures. Not a cloud in the sky. Dinner on the deck three nights in a row!

I am keeping with my goal of running 60 miles in July. Two miles yesterday and four miles today. No miles tomorrow - so excited for a "day of rest"!

This morning I put together a yummy marinade/salad dressing for a skirt steak. I whirled one cup fresh cilantro leaves, 1 jalapeno pepper, 3 cloves of garlic, 3 Tablespoons extra virgin olive oil, ¼ cup fresh lime juice, 1 teaspoon Kosher salt and 1 teaspoon ground cumin together in my little mini-chopper. I reserved ¼ cup of the sauce to dress a corn  salad (I was inventing in my mind) and poured the rest of the cilantro mixture over a 3/4-pound skirt steak - which I left to marinate all day in the fridge.

This evening, DT grilled the steak.

I served the steak with a salad made with 2 ears grilled corn (cut off the cob) from our 4th of July dinner, ½ cup finely minced red bell pepper and ¼ cup finely minced red onion. The reserved marinade/salad dressing was poured over the corn salad. (NOTE: do not use the marinade from the steak as salad dressing!)

While DT was grilling the steak, we had a visitor in the tree next to our deck.

Yo! Humans! Are you grilling beef?

Why is it the raccoons never show up when we are grilling veggies?

Dang. Don't even tell me you are serving that beef with a roasted corn salad! Lady, you're killing me!

I'm outta here.

The steak, cooked 4 minutes per side, was tender and juicy.

I served the sliced steak over a bed of arugula leaves and scooped a bit of the roasted corn salad on the side. This meal was so easy and everything - except slicing the avocado - could be prepared in advance.

Many different textures. Sweet corn. Spicy beef. Crunchy greens. Cold beer. A lot going on in this dish. Easy and delicious. Healthy and economical.

The only other item served was sliced avocado - drizzled with a little olive oil... and black pepper.

Come on, people. Seriously? Did you really have to eat everything on your plates? Nothing for me?
