Impromptu Late Night Go Duck Pasta

With only one day to recover from our whirl-wind weekend trip to Central California, DT and I were right back at it today. Dave left very early this morning for a day of meetings in Eugene to help plan/organize TrackTown12 (aka the 2012 Olympic Track & Field Trials). The fact I have a part-time hubby will guarantee the rest of America will enjoy a perfectly well-run (pun intended) Olympic Trials and will ensure America will have the best-possible team in London.

Am I on a track & field bender? Sorry. I can't help myself. Just re-watching the Oregon v Stanford football game reminds me that fabulous athletes are fabulous athletes - especially if they are on the track team and the football team!

So while My Driver was in The Eug all day, I ran three miles on the treadmill and prepared Lisa's childhood bedroom and sitting room for the painters. Tomorrow at 8:30a, our house will be filled with a crew of men who will be painting ceilings and walls - and another crew of men who will be pressure-washing the driveway.

Hopefully before it freezes and snows. Yes. Snow is predicted. Never a dull moment at Taylor Manor.

Did I mention Dave's college roommates are flying-in this weekend for the USC game?

Since I was busy all day and DT was away all day, it was lucky Brother Steve left us with a basket of produce from his garden. You make-do with what you have... and I had four yellow heirloom tomatoes, one yellow bell pepper, garlic, yellow onion, fresh basil and a lot of fresh arugula... (and pasta and parmesan cheese).

Add a bottle of pinot grigio and you have yourself a feast.

I sauteed about one cup of diced yellow onion in olive oil for quite a while, until it began to caramelize. While this was going-on, I was boiling a half-pound of butterfly pasta. (Any pasta will do with this sauce - spaghetti, penne... anything.)

When the onion was browning and beginning to crisp, I added three (YES, THREE) cloves of minced garlic, Kosher salt and a few turns of the pepper mill and let it cook over a medium heat for a few minutes before adding the diced yellow pepper and four chopped yellow tomatoes (about four cups).

Just as the vegetables hit the pan, I added a big splash of dry white wine (about one-quarter cup) and I let the veggies simmer for a few minutes while the pasta boiled. Just before serving, I added a large handful of slivered basil leaves.

GO GREEN & YELLOW!

And, since I can't think of very many pasta dishes that can't be improved with a bed of arugula leaves, I served the yellow tomato sauce - tossed with the pasta -  over a bed of fresh arugula.

Salad and entree served as one! Just a little parmesan sprinkled over the top as a garnish - completely optional.

Easy late-night meal to feed my hungry and very tired Driver. Thank you, again, Brother Steve and Gina, for dinner!

Have you missed Our Little Grandbaby? At three months, Little Leo is holding himself up like a regular infant Super Hero. Cutest Baby Ever! We will be seeing Baby Leo next week - can't wait!
