Good Knee News

Indio, California:  Good news to report about Dave's knee injury. This morning, after his MRI was read during a meeting with an orthopedist, Dave learned he has a tear in the meniscus on his left knee. I realize any knee injury is not a "good thing" but a tear in the meniscus is very treatable and a repairable injury on a 60-something runner with 85,000 lifetime miles logged. DT's knee can be repaired/cleaned-up with a simple non-invasive (15-minute) procedure that requires only a few days of rest/ice after the surgery, and a slow-but-steady rehab.

Very good news, indeed!

The doctor fitted My Driver with a very fancy knee brace. Now we just wait as the insurance situation is sorted out and a date for the procedure is scheduled. (Hopefully, he can have the arthroscopy here versus Portland.) Updates will be posted as information is known.

Meanwhile... Chinese Week continues in our little casita in Indio. Tonight I made a very easy (no recipe required) vegetarian/vegan stir fry with garlic, ginger, onion, green pepper, zucchini, carrots and cabbage - sautéed before adding fresh noodles and a simple sauce of soy sauce, rice vinegar, sesame oil and little squirt of Sriracha Sauce for heat. Slivered green onion as garnish... because slivered green onion is basically a required garnish on most Chinese dishes.

I bought three bunches of green onions for China Week.

Who does that?

There is nothing more simple than a fried noodle dinner. No recipe. Noodles + whatever veggies you have in the fridge. And while I "know" this is a Chinese dish, fried noodles is an every-day dish all across Asia. Same ingredients; different name.
