Caramelized Onion Dip

Though this recipe contains only a few ingredients, it packs a powerful flavor punch. Make this dip several hours before serving so the flavor can develop.

1 large yellow onion, minced very fine (do not use a sweet onion)
3 Tablespoon olive oil
1/2 teaspoon Kosher salt, optional
1/2 teaspoon ground black pepper
1 teaspoon fresh thyme (or ½ teaspoon dried)
2 teaspoons balsamic vinegar
16 ounces sour cream
Potato chips, for serving
 
Heat a skillet over a medium heat and coat the bottom with the olive oil. Sauté the minced onion, stirring nearly constantly, until they are caramelized to a deep golden brown, 20-30 minutes. Be careful to not let the onion bits burn. Remove from heat and stir-in the salt, pepper, and thyme, then drizzle the balsamic vinegar over all and stir to combine. Place the caramelized onions on a medium mixing bowl and leave to cool completely. Stir-in the sour cream; mix well. Cover and chill for at least two hours before serving. Serve with potato chips. Makes just over two cups.
