No RV kitchen is complete without a box of zip-lock bags! Make this in the morning and let the chicken marinate all day. This is an easy recipe and sure to please every DH who claims he “doesn’t like” Indian food. The marinade makes enough for one pound of chicken (or whatever). I use boneless, skinless breasts, but it is also great with leg-thigh pieces.
MARINADE:
1 cups plain yogurt (8 oz. cup)
juice from half a lemon
1 Tablespoon olive oil
1 Tablespoon grated, peeled, fresh ginger
2 garlic cloves, minced
1/2 tsp salt
1/2 tsp ground coriander
1/2 tsp ground turmeric
1/2 tsp ground cumin
1/2 tsp cayenne pepper
1/4 tsp saffron threads, crumbled
1/4 tsp ground black pepper
1 lb chicken pieces (your preference)
In a small bowl, blend all marinade ingredients with a whisk, until smooth. Place chicken pieces in a plastic zip-lock bag and pour marinade over. Close bag and turn to coat chicken. Lay flat in refrigerator all day, or as long as 24 hours. Turn bag over a few times, if you think about it. BBQ on hot grill.
