Golf in Park City

Park City, Utah: Considering we are on the interstate, we both slept well. Rested for our day on the links. DT had for some reason booked a tee time on one of the worst places I have ever golfed. It was a goat track, on steep uphills, often the cart path was on dirt. They had run out of score cards. The hills were almost too steep to be safe. The redeeming factor? The course had good views over the valley and up to the ski slopes/gondolas.

We also met a friendly marmot on the 1st hole and saw at least 1,001 ground squirrels. The squirrels must have been acclimated to people waving big sticks at a fast pace, because a squirrel would be nibbling on something on the tee box and not even flinch when anyone hit a drive! We were paired with a young couple from - you won't even believe this - La Quinta, California. While being introduced, they used the same line we use: We are from the Palm Springs area... because few know where La Quinta, California might be. We laughed to learn we are practically neighbors, but meeting for the first time in Utah. Allison and Darren were big hitters. Allison could out-drive DT like it was her job and often her husband as well.

Above is one of the "flattest" sections of the 18 holes. Canyon Golf Course runs under ski lifts. In the winter, the links serve as a cross country course. It is steep. On several holes, golfers are hitting hundreds of feet below to unseen greens. It is crazy.

But look at the pretty views to the ski runs behind us. The course runs up the canyon behind us. We were both exhausted - me, just from holding on for dear life in the golf cart.

We had used Uber today for our rides to/from the course, and after showers we had a quick dinner while watching the All-Star Game on television.

Caprese

I sauteed sliced baby portabella mushrooms in olive oil with garlic and shallots, then set them aside and sauteed shelf-stable gnocchi in olive oil and butter until brown. Then the sauteed mushrooms were added back to the pan with the gnocchi, finished with a splash of sherry and a splash of cream. Garnished with parmesan and parsley. First time to saute shelf-stable gnocchi, and it was better than expected. Shelf-stable gnocchi is a great addition to a RV (or home) pantry.

Meanwhile in Montana... Brother Rick caught a gorgeous Brown Trout today. Must have been 19 inches. He released it.
