Portland, Oregon: Turned out to be a great day for soup. Mother Nature must have turned her calendar over to September this morning and flipped-on the “Autumn” sign. We had rain.
Of course we had rain – My Driver went golfing.
We are celebrating “French Week” around here and on Thursdays we have soup, so tonight was the perfect excuse to make my ridiculously easy and ridiculously elegant Potato Leek Soup. The recipe has very few ingredients and comes together quickly and requires only a potato masher to “puree” the soup. If you want to go all-fancy, use an immersion blender. But it is not required. Tonight I used chicken stock and added a splash of half & half (because I had a splash of half & half in the fridge and could not think of another purpose for it this week).
Nothing could be easier than this velvety soup and there were no leftovers at our house.
I served it with a salad of arugula and grated Parmesan cheese – tossed with a little lemon juice, olive oil and black pepper.
Dave invented this salad hisownself and since he produced this leafy masterpiece, I have recreated it several times a month. It is just lovely! Yeah, DT!
The only other thing to grace our table this evening was a bit of chewy 7-grain bread from the bakery.
I can’t make everything. I am busy. I had a haircut and pedicure today.
French Week concludes tomorrow evening with the most classic of French dishes… that I have been prepping since MONDAY!
