Yogurt French Toast

Use a high-quality French loaf or Challah in this recipe. (Home-made whole wheat Challah was used in this photo.) I use honey yogurt, but vanilla or plain will also work.

2 eggs
6 oz Greek-style yogurt, plain or honey or vanilla-flavor
½ cup milk
¼ teaspoon ground cinnamon(or to taste)
pinch of salt
4 one-inch slices good quality Challah or French bread
Vegetable oil for frying

Suggested toppings:

butter
maple syrup
fresh blueberries

In a medium measuring bowl, beat eggs with a whisk until frothy. Add yogurt and whisk until batter is smooth. Stir in milk, cinnamon and a teeny pinch of salt.

Place sliced bread in a small shallow casserole. Pour batter over. Turn to coat and leave ten minutes while bread soaks up the batter.

Coat frying pan with vegetable oil and fry each side of the bread over medium heat until golden brown, flipping only once, about six minutes per side.

Serve immediately with your choice of toppings.
