Spinach Gratin

This delicious gratin is very popular! One 16 oz bag of frozen chopped spinach will also work in this recipe. Sometimes I use Gruyere cheese on the top.

2 Tablespoons butter
1 cup yellow onion, chopped fine
Two 10 oz. boxes frozen chopped spinach, thawed and squeezed dry
1 cup half & half
½ teaspoon kosher salt
freshly ground black pepper, to taste
dash ground nutmeg
1 cup freshly grated Parmesan cheese, divided

Heat oven to 375°. Melt the butter in a medium skillet and sauté the chopped onion over a medium heat until translucent, ten to fifteen minutes.

Place the spinach in a mixing bowl. Add the sautéed onion; stir to mix. Add the half & half, salt, pepper and ground nutmeg; stir to combine well. Add 3/4 cup grated Parmesan cheese; stir to mix.

Place the spinach mixture in a small oiled casserole. Smooth top and sprinkle remaining 1/4 cup Parmesan cheese over the top. Bake, uncovered, for 30 minutes or until browned on top and bubbling around edges. Let rest five minutes before serving.
