Snickerdoodles

My Mother was famous for her Snickerdoodles.

Mix together:

2 sticks soft unsalted butter (1 cup)
1½ cups sugar
2 eggs

Sift together and stir in:

2¾ cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt

Chill dough one hour, or as long as overnight. Roll into balls size of walnuts.

Roll balls in mixture of:

4 Tablespoons sugar
4 teaspoons cinnamon

Place two inches apart on parchment paper-lined cookie sheets. Bake at 400° until lightly browned, but still soft 8-10 minutes. Remove to wire racks, cool.

Makes 3½ dozen.
