RV Brownies

Though this recipe is easy enough for the RV (minimal dish-washing, no electric mixer required), it is the recipe I most always use at home. The brownies are super moist and gooey. Planning a trip in the RV? Mix the dry ingredients before you leave, put them in a zip-top bag and write the recipe on the bag with a Sharpie. Save another step by using the wrapper from the stick of butter to oil the baking dish. The walnuts are optional, but I always add walnuts.

1 stick unsalted butter (½ cup)
½ cup sugar
½ cup brown sugar (lightly packed)
½ cup all-purpose flour
¼ teaspoon Kosher salt
½ teaspoon baking powder
6 Tablespoons unsweetened cocoa powder
2 eggs
1 teaspoon vanilla
½ cup chopped walnuts (optional)

Heat oven to 350°. Oil an 8×8-inch baking dish.

Place the butter in a medium microwave-safe bowl and melt the butter completely, 1 to 2 minutes. Add the sugar and brown sugar and use a rubber spatula to stir very well to combine. Set aside to cool while you assemble the dry ingredients.

Place the flour, salt, baking powder and cocoa in a small bowl. Use a whisk to “sift” the dry ingredients. Set aside.

Add the eggs and vanilla to the butter/sugars mixture and whisk well for about one minute. Pour the dry ingredients into the butter/sugars mixture and carefully stir until the dry mixture is just combined. Stir in the nuts, if using. Pour batter into the prepared baking dish. Smooth-out the top with the spatula. Bake for 20 minutes, or until the brownies appear to be leaving the sides of the baking dish. The center will seem barely set. Remove to rack and allow to cool completely (a very difficult chore!) before cutting.

Cut and serve. Enjoy!
