The addition of a little semolina flour gives this loaf a dense texture and a lovely color. Semolina flour is made from the coarsely ground endosperm of durum wheat. Semolina flour is used mainly for making pasta and is available at most supermarkets. This is a pretty loaf of bread for the table and slices beautifully. The recipe makes one round loaf, but can easily be made into any shape you desire.
Add to bread machine in this order:
1¼ cups water
2 Tablespoons olive oil
2¼ cups white bread flour
½ cup semolina flour
1 teaspoon salt
1 scant Tablespoon yeast
Mix ingredients, in order given, in bread machine. Use white or french/dough cycle. After cycle is finished, let rest for 10 minutes. On floured board, shape into a ball. Dust top decoratively with flour. Place on oiled baking sheet that has been sprinkled with cornmeal. Slash the top (with a sharp knife edge or razor blade) with a cross, the two lines going from edge to edge. Cover with a towel and rise for 40-45 minutes, or until doubled. Bake at 400° for 25 minutes.
