
Your family & friends will love this savory bread! Save your fingers and buy pitted olives. Recipe makes two small loaves (or you can make one large loaf, as in photo above).
Add to bread machine in this order:
1 cup water
2 Tablespoons liquid from olive jar
1 Tablespoon extra-virgin olive oil
1 teaspoon salt
1½ cups white bread flour
1½ cups light rye flour
scant Tablespoon yeast
Add later:
1½ cups Kalamata olives, pitted, coarsely chopped and patted dry
Place ingredients (except olives) in bread machine – add in order listed. Select white/dough cycle. When cycle is finished, remove from machine to a floured board. Divide dough in half and roll to 12″x15″ rectangle. Sprinkle half the olives over dough, roll-up jelly-roll style, beginning at longer side. Pinch ends. Repeat with other half. Place on oiled baguette pans or cookie sheets. Slice tops with razor blade or sharp knife. Cover and let rise until doubled, about one hour. Bake at 375° about 25-30 minutes.
