Gina makes the best apple cake ever! Sometimes she uses apples and pears. For best results use a metal pan.
2 cups sugar
1/2 cup vegetable oil
2 eggs
4 cups diced apples (peeled or not – your choice)
2 cups flour
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda
Combine sugar, oil and eggs. Add diced apples. Sift together flour, salt, cinnamon, nutmeg and baking soda. Add dry ingredients to apple mixture. Pour into oiled 9×13″ metal cake pan. Bake for 60 minutes in preheated 350º oven. Gina serves this cake with whipped cream.
