Caramelized Onion Dip

Though this recipe contains only a few ingredients, it packs a powerful flavor punch. One onion may seem like a lot of onion for only one cup of sour cream, but the onions cook-down quite a bit – so just relax. Make this dip several hours before serving so the flavor can develop. If serving with potato chips, considering omitting the salt.

1 large yellow onion, minced very fine
1 Tablespoon olive oil
¼ teaspoon Kosher salt, optional
¼ teaspoon ground black pepper
¼ teaspoon dried thyme
8 ounces sour cream
Potato chips, for serving

Heat a skillet over a medium heat and coat the bottom with the olive oil. Saute the minced onions, stirring nearly constantly, until they are a deep golden brown, 15-20 minutes. Be careful they do not burn. Remove from heat and stir-in the seasonings. Place the caramelized onions on a medium mixing bowl and leave to cool completely. Stir-in the sour cream; mix well. Cover and chill for at least two hours before serving. Serve with potato chips. Makes just over one cup.
