According to my calculations, this recipe – which makes nearly one cup of dressing – has 135 calories and less than 3 grams of fat – for the entire cup! Plus, it is delicious. No one will know it’s actually a very healthy splurge. The taste is fresh. Really fresh. No chemicals! It is best to make this salad dressing early in the day so the flavors have some time to develop. Enjoy!

4 oz (½ cup) fat-free plain (unflavored) Greek yogurt
¼ cup low-fat buttermilk
½ ounce blue cheese (about 1-inch cube), crumbled
1 teaspoon white wine vinegar
One Tablespoon fresh parsley leaves, minced
A teeny bit of minced garlic (or a pinch of garlic powder)
A pinch Kosher salt, or to taste
Black pepper, to taste

Stir all ingredients together in a small bowl. Refrigerate. Serve well chilled. Makes about one cup and keeps for three days, refrigerated.
