Indio, California: Thursday Night is Soup Night at our house… or motorhome… and keeping with the Chinese theme all week: Tea House Chicken Soup!
It’s my version of the chicken noodle soup once served in the Tea House of the Grand Hotel in Taipei, Taiwan. (Lisa loved to visit the little tea house while we lived in Taipei in the 80’s.) The recipe makes two bowls of soup. Few ingredients. No leftovers. No fuss.
There is no longer a tea house in the basement of the Grand Hotel. They moved it up to the corner of one of the restaurants on the main floor. They no longer offer chicken soup either. But the adorable little tea tables remain.

Any time you feel like a trip to Taipei, just make this soup.
There were several new fancy motorcoaches on display in the resort this afternoon. Millennium and Oregon’s Marathon. They served wine and passed hors d’oeuvres and let their guests tour the motorhomes. Gorgeous, but not one bus had a desk, so we passed.
