Indio, California:  Strange that National Margarita Day falls in February. In most parts of This Nation, February weather doesn’t get one to craving a margarita. Though it might get one to craving a vacation to a tropical climate… and then having a margarita. On the beach. Luckily we have a motorhome, so can drive it to where the weather warrants a margarita every day! In lovely Indio, February 22 provided perfect margarita weather – pushing towards 90° this afternoon.

And for those who like to plan ahead, National Martini Day is June 18th!

Since it was officially “National Margarita Day”, I didn’t mess around with a Skinny Margarita, but instead opted for the real deal.

You only need one.

Guess what goes really, really, really well with a margarita? Tacos!

I thought I would switch-out my two-day obsession with fish tacos in corn tortillas to chicken tacos in flour tortillas. (I was inspired by Cory. Since she tried my Chicken Taco recipe the other night, I have been craving chicken tacos.) Yes, yes, yes, there are 50 perfectly delicious taco joints within a mile of this resort, but… I had all the ingredients on-hand… so why leave the resort? Grilled marinated boneless, skinless (organic & Kosher) chicken thighs, cilantro and tortillas. A squeeze of lime. Perfection.

Sorry. The tacos were “two photo worthy”.

Another gorgeous desert sunset!

I dined with our neighbors, Lois & Steve. They are keeping an eye on me while DT is away. This is an easy chore as they gaze onto the back of our motorhome from their RV window. Lois & Steve think we are friendly. Little do they know we have parked this bus – with the huge Oregon “O” on the back – to slowly force them to become Duck fans through our not-so-subtle not-so-subliminal recognition technique.

I will try to not post any taco recipes or photos for at least a few days. No promises. Until my next update, I remain, your celebrating correspondent.

SLOGGER REPORT:  Another lousy three miles. It’s my fault. Four miles was on the agenda, but I started running too late in the morning. Not enough fuel and the temperature was already in the 80s. Excuses. Excuses. Excuses.
