Indio, California: Where are we? The past week has been a very exciting blur - most of it lived on Interstate 10. What this family needs is a few days of rest.
But y'all know that isn't going to happen.
Yet.
The last time I wrote, we were in Scottsdale, Arizona. The Oregon Ducks had won the Fiesta Bowl. After the game, we drove out to Scottsdale to check into our reserved hotel room around midnight. Our room was nice, but it was dark and late - and we were over-tired. Imagine our surprise when we woke to this gorgeous view and found ourselves in a luxuriously fancy hotel - the Westin Kierland... which was, sadly, a total waste of our money as we only slept and left. Fancy or not, this was the first hotel we have ever visited that had a toilet plunger ("Sanitized for Your Protection") featured in the bathroom. Not sure what they were expecting from us, or if they just have poor plumbing? Odd.Four hours later, we were back in Indio - in time for dinner at the clubhouse and an early night for these road warriors.
This morning we slept-in and enjoyed a sunny day in the desert.
Since we just can't get enough of I-10, we are driving to Los Angeles in the morning to watch the Redskin game with Lenny. I baked more cheese crackers for our Little Grandson. Today I mixed all-purpose flour with whole wheat flour. I hope Leo likes the change.
Savory cheese biscuits - ready for Leo.Our dinner consisted of a very healthy and easy-to-prepare Salsa Chicken. Sliver a green pepper and place it in the bottom of an oiled covered casserole, top with chicken breasts or thighs. Cover with salsa and sprinkle a chopped jalapeno over. Bake and serve over rice.
