Indio, California: Where are we? The past week has been a very exciting blur - most of it lived on Interstate 10. What this family needs is a few days of rest.
But y'all know that isn't going to happen.
Four hours later, we were back in Indio - in time for dinner at the clubhouse and an early night for these road warriors.
This morning we slept-in and enjoyed a sunny day in the desert.Since we just can't get enough of I-10, we are driving to Los Angeles in the morning to watch the Redskin game with Lenny. I baked more cheese crackers for our Little Grandson. Today I mixed all-purpose flour with whole wheat flour. I hope Leo likes the change. Savory cheese biscuits - ready for Leo.
Our dinner consisted of a very healthy and easy-to-prepare Salsa Chicken. Sliver a green pepper and place it in the bottom of an oiled covered casserole, top with chicken breasts or thighs. Cover with salsa and sprinkle a chopped jalapeno over. Bake and serve over rice. Try it one night this week. You will be happy with the result.
