Fruits of Our Labor

Indio, California: Though I appreciate each day and relish every moment, some days are better than others. Some days just suck. Nothing necessarily terrible happens, but just one thing after the other occurs, stressing every fiber of my little pea-sized brain to the melting point.

Today our wireless router died. Not earth-shattering. Easily replaced.

Our router had been giving us hints of a near-future demise, so I had purchased a replacement, thinking - no big deal - we could simply switch-out the five-year-old wireless router when it bites the big one and we would be back in business pronto.

Wrong.

Seems having our own private satellite internet provider makes us special. Not in a good way free-champagne-special. In a we-require-tech-support special. After being transferred from Alaska to India, I phoned my genius (his name and number will only be provided after you wire three million Euros to my account on Cyprus) talked me through the set-up and DT and I are back on-line.

Three hours of my life I can never get back.

Then I had to deal with this little disaster:

Cases of Camping Journal RV Log Books were recently received from the publisher and one case was damaged during shipment. The entire case (24 books) - destroyed! Ruined. Damaged beyond repair. Will not be sold. Yes, the books were insured and can be recycled - but the waste is so sad.

But one thing is doing well around here. We have one tomato on our vine! The little fruit is about the size of an olive pit, so maybe, one day, we will be dining on the fruit of our labor?

As you may recall from my March 11 column, I have been working on a Mexican meatball recipe. I have tried beef meatballs in a red enchilada sauce (over rice) and have experimented with a turkey or chicken meatball in a green enchilada sauce. The turkey with green enchilada sauce is the big winner.

The greatest thing about these meatballs? No frying or baking. They simply simmer in the green sauce. RV-easy and no mess.

Served over rice, the Turkey Enchilada Meatballs were the best part of our day. This recipe will be shared in the April RV Goddess Newsletter. LET'S MOVE IN MARCH! I have challenged y'all to get out there, lace up your sneakers and walk or jog (or the exercise of your choice) at least 30 minutes - five or six days a week in March. I'm doing this for charity and my prominent backside.

Up early and out the door for a four-miler inside the RV resort. I ran three miles and cooled-down/walked one mile. Sad thing, the difference in time between walking and jogging for me is basically a nano-second. People power-walking with their poodles pass me. Around and around and around I go on our half-mile canal loop. My sore knee isn't any sorer, but I continue icing. I did see a roadrunner this morning and that is always a good thing.
