Chinese Feast

Indio, California: A quiet day around the resort. The sky was cloudy all day and the temperatures did not climb above 65 degrees. Probably the chilliest day since we arrived in November.

Since we have been unable to find a decent Chinese restaurant in the area (we will - there has to be one out there somewhere), I cooked Chinese tonight using three recipes from this website.

Hot Sour Soup. Tonight I doubled-up on the white pepper, so it was actually pretty dang hot. I used chicken stock, but this soup can easily be prepared for vegetarians (or vegans if the egg is omitted).

We also dined on Kung Pao Chicken - served over rice - and Taiwan Pickle. DT picked up a six pack of Tsing Tao (pronounced Ching-Dow) Pure Draft beer for our feast. This messy meal was prepared in our outdoor kitchen.

Tomorrow we will drive over to Los Angeles to see a certain little fellow...
