Indio, California: It is like a ghost town around the old trailer park this week. A lot of RVs are here, but not a lot of people. We assume they fly-off somewhere to celebrate Christmas with their family in cold Minnesota or Calgary? Not sure, but there are many motorhomes here with their slide rooms “in”.

Dave and I are out and about. We are out walking our granddawg or giving him rides in the golf cart. Reese is enjoying his time with Bubba and Bubbe. His tummy troubles are over (oh, thank goodness – that was not fun!).

We’ve been eating pretty well this week.

Smoked Chicken Chili
A few weeks ago I bought a smoked chicken and made enchiladas. I shredded the remaining chicken, boiled the bones for stock and put it all in the freezer. Thursday (official soup day at our house) I made a big pot of chili with navy beans, celery, onion, the frozen stock and shredded chicken. Must admit, this is one of the best things to come out of my kitchen in a while. Organic, too and just delicious.
On Friday, we celebrated Jimmy Buffett’s birthday.
We had margaritas (of course)… with a little muddled jalapeno.
Enjoyed another beautiful sunset.
And had Cheeseburgers in Paradise. Just the way Mr. Buffett described in his famous song:
I like mine with lettuce and tomato
Heinz 57 and French fried potatoes
Big kosher pickle and a cold draught beer margarita
