As I have stated many (many, many, many, many, many) times before – we live in a virtual breadbasket of delicious fresh foods here in the Willamette Valley of Oregon. Not only are we blessed; our Northwest Neighbors provide us with their delicacies as well.
For example, line-caught Alaskan Coho Salmon.
I should have could have made sushi
Look at this gorgeous chunk of fish
No sushi tonight. I drizzled it with lemon juice, added a little kosher salt and cracked pepper –
and DT grilled the fillet outside on our deck… in the sunshine… in the 85° sunshine…
in Oregon… in May.

Served with homemade peach salsa. Very nice.
