If someone leaves a few zucchini on your porch – make this delicious bread!
3 eggs
1 cup vegetable oil
2 cups sugar
2 cups zucchini, grated (peeled if you choose)
3 teaspoons vanilla
3 cups flour
1 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
1 cup nuts or raisins, or both
Beat eggs until foamy; add oil, sugar and vanilla. Mix lightly. Add flour, salt, soda and baking powder and cinnamon and blend. Add zucchini and nuts. Pour into two oiled loaf pans and bake for one hour at 325º.
Makes two loaves.
