This salmon is simply delicious and very healthy. The cumin makes a nice crust. Serve with Coconut Jasmine rice for a wonderful dinner.
1 fresh mango – flesh diced, (about one cup)
2 spring onions, thinly sliced
2 or 3 stems fresh cilantro leaves, or to taste
1 jalapeño pepper, seeded (if desired), finely chopped (I seed half)
1 lime, cut in half
1 Tablespoons ground cumin
2 salmon filets, about 5 oz. each
In a bowl, combine mango, onions, cilantro, jalapeno and the juice of one half of a lime. Add salt to taste.
Prepare an outdoor grill. Rub the salmon fillets with ground cumin, salt and pepper. Grill for a few minutes per side, until just cooked through.
Squeeze juice from the remaining lime half over the salmon. Serve with the mango salsa on the side.
